1. Place the chopped potatoes in a large pot and cover with cold water by about 1 inch. Add 1 teaspoon salt and bring to a boil over high heat.

2. Reduce heat to medium and simmer for 15-20 minutes until potatoes are fork-tender. Drain thoroughly and return to the pot.

3. While potatoes cook, heat vegetable oil in a large skillet over medium heat. Add sausages and cook for 12-15 minutes, turning every 3-4 minutes until golden brown and cooked through (internal temperature should reach 160°F/71°C).

4. Mash the hot potatoes using a potato masher or ricer. Add butter, milk, thyme (if using), 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix until smooth and creamy.

5. Taste and adjust seasoning. Keep warm while finishing the sausages.

6. Serve sausages over a generous bed of mashed potatoes. Garnish with chopped parsley or chives, and sprinkle with grated cheddar if desired.

For extra crispy sausages, prick them lightly with a fork before cooking to allow fat to render out
