1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add minced garlic and chopped onion, cooking for 3-4 minutes until the onion becomes translucent and fragrant.

2. Pour in the chicken broth and bring to a gentle simmer. Add both drained beans, diced tomatoes with chilis, and corn. Stir in the Better Than Bouillon if using.

3. Add chili powder, cumin, seafood seasoning, and cayenne pepper (if using). Season with salt and pepper to taste. Let the mixture simmer for 15 minutes, stirring occasionally.

4. Reduce heat to low and add the cream cheese and shredded Colby Jack cheese. Stir continuously until the cheeses melt completely and the chili becomes creamy and smooth.

5. Gently fold in the crab meat, lobster meat, and shrimp. Simmer for 5-7 minutes until the shrimp turn pink and opaque, being careful not to overcook the seafood.
