1. In a medium bowl, whisk together soy sauce, brown sugar, pineapple juice, ketchup, vegetable oil, minced ginger, minced garlic, rice vinegar, and black pepper until the sugar dissolves completely.

Chef's Notes
For the best caramelization, don't move the chicken too frequently on the grill—let it develop a nice crust before turning.
If you don't have a grill, you can cook this in a cast-iron skillet over medium-high heat or broil it in the oven about 6 inches from the heat source.
The marinade works beautifully with chicken breasts too, but reduce cooking time to prevent drying out.
