3. Caramelize pineapple & shallot: In the same pan, add shallot and pineapple. Cook 3–4 minutes until pineapple edges char and shallot softens, scraping up browned bits.

4. Assemble: Warm tortillas in a dry pan or microwave. Slice chicken into strips. Layer tortillas with chicken, pineapple mixture, avocado, and cilantro. Drizzle with lime juice.
