1. Prepare the chia pudding at least 4 hours before serving (or overnight). In a medium bowl, whisk together almond milk, chia seeds, honey (or maple syrup), and vanilla extract until well combined.

2. Let the mixture sit for 5 minutes, then whisk again to prevent clumping. Cover and refrigerate for at least 4 hours or overnight until the chia seeds have absorbed the liquid and created a pudding-like consistency.

3. While the chia pudding sets, prepare the raspberry layer. In a blender or food processor, combine fresh raspberries, pomegranate juice, and honey (or maple syrup). Blend until completely smooth.

4. Strain the raspberry mixture through a fine-mesh sieve to remove seeds, pressing with a spoon to extract all the liquid. Discard the seeds.

5. Once the chia pudding has set, give it a good stir to ensure it's creamy and well combined.

6. To assemble the dessert, spoon half of the raspberry puree into the bottom of two serving glasses or jars.
