1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

2. Bring a large pot of salted water to a boil. Add the carrot rounds and cook for 8-10 minutes until they're fork-tender but not falling apart.

3. Drain the carrots and let them steam dry for 2-3 minutes. Pat them dry with a clean kitchen towel.

4. Arrange the carrots on the prepared baking sheet, leaving space between each piece.

5. Using the bottom of a glass or measuring cup, gently press down on each carrot round until slightly flattened but still holding together.

6. Drizzle the olive oil over the smashed carrots, then sprinkle with garlic powder, smoked paprika, salt, and black pepper.

7. Roast in the preheated oven for 20-25 minutes until the edges are crispy and golden brown.

8. Remove from oven and immediately sprinkle with grated Parmesan cheese while the carrots are still hot.
