1. In a medium bowl, combine chicken pieces with cornstarch, egg white, salt, and black pepper. Mix thoroughly until all pieces are well coated. Let marinate for 15 minutes at room temperature.

Chef's Notes

For extra crispy chicken, double-fry the pieces: fry once at 350°F for 3 minutes, remove and let rest for 5 minutes, then fry again at 375°F for 2-3 minutes until deeply golden.

Remove seeds from dried red chilies if you want flavor without extreme heat, or use fewer chilies for a milder version.

Serving Suggestions
