1. In a medium bowl, whisk together raspberry preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes until smooth. Set aside.

2. Pat chicken thighs dry with paper towels and season both sides with kosher salt, black pepper, and chili powder.

3. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Once hot, add chicken thighs and sear for 4-5 minutes until golden brown. Flip and cook for another 3-4 minutes.

4. Reduce heat to medium-low and pour the raspberry glaze over the chicken. Cover and simmer for 15-20 minutes, basting occasionally, until chicken reaches internal temperature of 165°F (74°C).

5. Remove chicken from skillet and let rest on a cutting board for 5 minutes. Meanwhile, increase heat to medium-high and let glaze simmer for 3-4 minutes until slightly thickened.
