Instructions
Step 1
1. Season the chicken pieces with salt, pepper, and garlic powder. Toss to coat evenly.

2. Heat olive or sesame oil in a large skillet over medium-high heat. Once hot, add the chicken pieces in a single layer.
Step 3
3. Cook the chicken for 5-6 minutes, stirring occasionally, until golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove chicken to a plate and set aside.
Step 4
4. In the same skillet, reduce heat to medium. Add the chopped mango, soy sauce, honey, rice vinegar, minced garlic, grated ginger, and chili flakes (if using).
Step 5
5. Simmer the mixture for 3-4 minutes, stirring occasionally, until the mango breaks down and the mixture becomes fragrant.
Step 6
6. Pour in the cornstarch slurry and stir continuously for 1-2 minutes until the sauce thickens to a glossy glaze consistency.
Step 7
7. Return the cooked chicken to the skillet and toss to coat evenly with the mango glaze. Cook for an additional 1-2 minutes to heat through.
Step 8
8. Remove from heat and serve immediately over steamed jasmine rice or rice noodles. Garnish with sliced green onions, toasted sesame seeds, fresh herbs, and lime wedges if desired.

Chef's Notes
Use very ripe mangoes for the sweetest, most flavorful glaze. If your mangoes aren't quite ripe, add an extra teaspoon of honey to the glaze.
For extra caramelization, let the chicken pieces sit undisturbed for 2-3 minutes before stirring to develop a golden crust.
If you prefer a smoother glaze, blend the mango mixture before adding the cornstarch slurry.
Serving Suggestions
Serve this vibrant chicken over steamed jasmine rice, coconut rice, or rice noodles for a complete meal. Pair with simple steamed vegetables like broccoli or bok choy, or a crisp Asian cucumber salad. This dish works beautifully for both casual family dinners and more elegant gatherings.
